Ingredients:
- 4 boneless, skinless chicken breasts
- 8 slices of bacon
- 1 cup of mushrooms, sliced
- 1 1/2 cups of shredded Monterey Jack and Cheddar cheese blend

- 1 tablespoon of olive oil (for cooking the chicken)
For the honey mustard sauce:
- 1/2 cup of Dijon mustard
- 1/2 cup of honey
- 1/4 cup of mayonnaise
- 1 tablespoon of lemon juice
Instructions:
- Prepare the honey mustard sauce:
- In a small bowl, mix together Dijon mustard, honey, mayonnaise, and lemon juice. Set aside.
- Cook the bacon:
- In a skillet, cook the bacon until crispy. Remove and set aside on paper towels to drain.
- Cook the chicken:
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for about 5-7 minutes per side, until they are golden brown and fully cooked through. Set aside.
