Alice Springs Chicken is a popular dish from Outback Steakhouse, featuring grilled chicken breasts topped with honey mustard, sautéed mushrooms, bacon, and melted cheese. Here’s how to make it at home:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 slices of bacon
  • 1 cup of mushrooms, sliced
  • 1 1/2 cups of shredded Monterey Jack and Cheddar cheese blend
  • Salt and pepper, to taste
  • 1 tablespoon of olive oil (for cooking the chicken)

For the honey mustard sauce:

  • 1/2 cup of Dijon mustard
  • 1/2 cup of honey
  • 1/4 cup of mayonnaise
  • 1 tablespoon of lemon juice

Instructions:

  1. Prepare the honey mustard sauce:
    • In a small bowl, mix together Dijon mustard, honey, mayonnaise, and lemon juice. Set aside.
  2. Cook the bacon:
    • In a skillet, cook the bacon until crispy. Remove and set aside on paper towels to drain.
  3. Cook the chicken:
    • Season the chicken breasts with salt and pepper.
    • Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for about 5-7 minutes per side, until they are golden brown and fully cooked through. Set aside.
  4. Sauté the mushrooms:
    • In the same skillet, add the mushrooms and sauté for 4-5 minutes until they are soft and browned. Set aside.
  5. Assemble the chicken:
    • Preheat the oven to 350°F (175°C).
    • Place the cooked chicken breasts in a baking dish.
    • Brush each chicken breast generously with the honey mustard sauce.
    • Top each breast with sautéed mushrooms, two slices of bacon, and a generous amount of shredded cheese.
  6. Bake:
    • Place the baking dish in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Serve the Alice Springs Chicken hot, with a side of vegetables, mashed potatoes, or fries.
